THREE MEALS THAT ONLY NEED THREE INGREDIENTS

Life feels busier than ever in December, and it's hard to always remember what you have indoors to use to create a meal. These recipes are for those days when you get home and realize you have very little ingredients. 

STUFFED BBQ CHICKEN SWEAT POTATOES

(This will work with a regular potato too)
Preheat oven to 425 degrees F. Lay sweet potatoes cut side up on a large baking sheet. Roast until tender, about 35 minutes, depending on size of your potatoes
In a saucepan set to medium-low, stir together chicken and BBQ sauce. Heat until warm, 5-10 minutes.
Top each potato with scoopfuls of chicken. Spoon over additional BBQ sauce and sprinkle with chopped parsley or sliced green onions, if desired.

BLACK BEAN SOUP

(If you happen to have sour cream, shredded cheese, green onions, chives, jalapeños add those as a garnish)
Combine all ingredients in a medium pot. Bring to a boil and simmer for 10 minutes.
Remove from stove and blend using a blender.

SKILLET CHICKPEAS AND BROCCOLI RICE

Preheat oven to 350 degrees F.
Add broccoli florets to a food processor and pulse until it resembles rice.
Add broccoli, and chickpeas to skillet on medium heat. Stir to combine.
 If you have any garlic, salt, pepper, lemon juice, or olive oil (add this and stir to combine).
Cook for about ten minutes or until broccoli is tender.
Break three eggs over mixture. Do so carefully so that the yolk stays in tact to the membrane.
Place skillet in the oven and bake for 15 minutes.
